Next Week’s Meal Plan: 5 Fast & Fancy Dinners for the Week Ahead
As we head into the holiday home stretch, we’ve got a week of guests, parties, and classroom holiday programs to fill up the calendar. If it were just the four of us as usual, I’d probably stick to a template of pasta, tacos, breakfast, and pizza, but with houseguests I want some dinners that are still fast and easy, but a little impressive too. Here’s what I’m cooking and eating during a happily harried holiday week with houseguests.

Did you make any resolutions around cooking for 2018? Mine is to try some new recipes this month to get me out of a little cheese and wine rut the end of December brought along with its festivities. This week’s meal plan is full of new winter recipes that I’ve been wanting to try. Most of them are heavy on the vegetables and there isn’t a ton of cheese, but there is still pizza.

Next Week’s Meal Plan: 5 Paleo Dinners for the Week Ahead
I decided to “go Paleo” about five years ago due to some health issues, and, for the most part, I haven’t looked back. Even though the diet gave me back my health, I don’t subscribe to dietary dogma. The truth remains that a diet mostly free of grains, dairy, and sugar makes me feel my best. When I switched to a Paleo lifestyle, I never anticipated that I’d find a greater groove in my cooking. Food became easier, simpler, and tastier.

Next Week’s Meal Plan: 5 Dinners to Restock My Freezer
During the holiday break between Christmas and the new year I went on somewhat of a cooking hiatus, and my husband and I relied on whatever was in the freezer for dinners. It was a nice and very welcome break, but it also left us with a very empty freezer and no meals to fall back on for busy nights when I don’t feel like cooking. Since this week isn’t very busy I stacked my meal plan with five freezer-friendly recipes that are easy to scale up and totally doable on a weeknight.

Next Week’s Meal Plan: 5 Easy Dinners with Help from the Slow Cooker
The slow cooker is often the hero of weeknight dinner. And while the idea of coming home to a hot dinner five nights in a row sounds broadly appealing, the thought of having dinner every night from the slow cooker itself does not. Luckily the slow cooker excels at bulk cooking. This week we’re going to use the slow cooker to batch cook sweet potatoes and salsa chicken to use throughout the week. Do this and you won’t have to cook anything on Sunday either.

Some kids are lifelong picky eaters, but most kids have waxing and waning seasons of it. Sometimes it’s even day to day. Right now, my 6-year-old refuses cauliflower unless it’s mashed. A few times a year I get burnt out on cooking. Rather than rely on delivery or dinners out, simplifying helps me work through the rut. Using a dinner template and keeping the recipes very basic usually means I spend less time choosing recipes and then less time cooking, which is perfect for the weeks when we just need dinner to be sustenance. These basic dinners only just happen to be vegetarian.
