Recipe: Jam and Ricotta Muffins
That fresh farmer’s cheese we made earlier this week inspired these muffins. They have a tender, buttery base with just a touch of allspice, and ricotta enriched with egg for a creamy topping. Then we plunked heaping spoonfuls of homemade strawberry jam in the middle. They turned out moist and jammy, just buttery enough but not too sweet.

Recipe: Peach and Spice Tea Muffins
There’s nothing like a hot, steaming muffin and a cup of tea to get us out of bed in the morning. Muffins are portable and endlessly flexible; nearly any quick bread or cupcake recipe can be made into a muffin. They can be sweet, nutty, refined, or whole grain. These muffins were born out of our love of tea – especially tea with citrus and spices – and a packet of dried peaches.

Flickr Find: Persimmon Oat Muffins
I was hit with the flu this week and did little of my usual eating, let alone cooking. One meal does shine through the haze, however – a nourishing bowl of oatmeal with Fuyu persimmon slices, memorable for the bit of freshness and sweetness they brought to an otherwise dreary period of canned soup. With their almost cinnamon-y flavor, persimmons are a natural complement to oats.

Recipe: Whole Wheat Raisin English Muffins
It’s a sick day for me, so I’m working at home on some recipes. With a congested head, I made the first mistake in cooking: I didn’t check to see if I had all the ingredients I needed before starting to test my winter breakfast bread wreath, so you’ll have to wait until tomorrow’s email for that.I didn’t have enough butter. Ouch, the yeast was already dissolving in warm water and the flour was already out. What’s a cook to do? Make English Muffins.

Recipe Review: Weight-Watchers Glazed Pear Muffins
Diet-specific recipes usually aren’t our thing, but we thought this one might be worth a shot. We were intrigued to see sour cream on the ingredient list and liked the fact that this recipe didn’t rely on any ingredient substitutes to achieve its healthiness. Here’s the verdict…Overall, we thought these muffins were pretty darn good! They were a bit dense and chewy, but in a way we found pleasing and very enjoyable to bite into!

You-Won’t-Believe-They’re-Whole-Wheat Blueberry Muffins
These muffins from Gourmet are made with whole wheat pastry flour, which as we know from this post has a low protein content. That means you get a healthier muffin with a slightly richer flavor without the dense texture that you might think of when it comes to whole wheat. And there’s one other fantastic thing about this recipe…We love that the batter makes exactly one dozen (full-size) muffins.

Recipe: Quick and Homey Oatmeal Raisin Muffins
The weekend is coming, and boy, I’m ready for it. I am spending time with family over the long weekend, and I’ve been putting together some make-ahead breakfast and dinners. Here’s one favorite breakfast goodie: a warm, tender, simple oatmeal raisin muffin. This recipe is adapted from the classic cookbook, More-With-Less, which was a standard reference book and cookbook in my childhood home. I love the quick ease of this recipe (one bowl!) and its reliably tender, moist crumb.

Recipe: Real Irish Scones
I once took a work trip to do nothing but learn about Irish milk, cheese, and butter. Lucky for me, the first thing I ate when I arrived, jet-lagged and haggard, was a scone. I still remember this particular scone because it was fluffier and richer than any scone I’d ever had. After spending a few minutes under the spell of this little morsel, I pulled myself together and asked the chef if it wasn’t in fact a biscuit.

Winter Morning Recipe: Honeyed Grapefruit Oat Scones
I am biased because I love scones. And I can’t seem to get enough grapefruit or citrus lately so these are a win/win as far as I’m concerned. But I think even non-scone folks will appreciate the oat-strewn dough, subtle citrus bite, and warm notes of ginger and honey you’ll find in this recipe. Moistened with a heap of Greek yogurt, this is your new winter go-to scone. There are many different types of scones out there.

Recipe: Coconut Mango Oat Muffins
Mornings are meant for muffins. They’re portable, easy to throw together, and can incorporate the season’s fruit beautifully. Such is the case with these vanilla-flecked, oat and coconut-strewn, mango-laden beauties. I love these muffins for many reasons. First, you can mix them by hand and there will be very few dishes (always a good thing). Second, they rely on my most favorite fat for cooking and baking: coconut oil.

Smart Tip: Beer-Brewers, Turn Your Spent Grains Into Muffins

It turns out there is a way to reuse that grain — and these moist spent grain muffins from the blog Love & Olive Oil are just the beginning.Taylor at Love & Olive Oil oven-dried the malted barley left after brewing a batch of beer and mixed it into applesauce muffins, where it added a little sweetness and crunch.

Healthy Breakfast Recipe: Whole Grain Morning Glory Muffins
I tend to go into hibernation mode at the first hint of fall. The looming cold weather inspires me to welcome people over and hole up for the night. Whether it’s sitting around a fire pit into the late hours of the evening or to lingering over a hearty breakfast on a chilly weekend morning, I just can’t think of a better way to spend time with my closest friends. I especially love when these visits turn into overnight stays.

Making Cupcakes or Muffins with Mason Jar Rings: Does It Really Work?
The Internet is rife with ideas for using Mason jars, but I rarely encounter new ways to repurpose the metal rings or bands. So I was instantly intrigued by a photo that has been making the rounds on Facebook and Pinterest, involving the use of Mason jar rings to make muffins or cupcakes. Would this really work? First I traced the photo back to the blog Lessons Line Upon Line, where this trick was used to make banana muffins — and then I had to try it for myself.

Breakfast Recipe: Blueberry Bran Muffins
Bran muffins can get a bad rap. They’re so often dry and overly-sweet, which always feels like a shame because bran has such a nice flavor in and of itself. Plus, there are so many ways to add a punch of flavor without a lot of extra sugar. How about a mound of blueberries, fresh lemon zest, and coconut oil folded into a delicate whole-grain batter? Truthfully I rarely bake muffins at home (I’m much more of a scone gal) because I usually find them to be not all that satisfying.

Will a Hotter Oven Give You More Magnificent Muffin Tops?
No matter what type of muffin I’m eating — pumpkin, banana-nut, corn, blueberry — the very best part is the rounded muffin top. The taller, the better. Why Won’t Muffins Rise in My New Gas Oven?
Q: I have a fail-safe muffin batter recipe I have always used with much success in my electric oven. I have now installed a gas oven, and while it has been perfect for browning dishes like mac and cheese, the muffins are not as impressive. They do not rise as much as when they bake in the electric oven (they are about 20 percent smaller). They don’t have that classic crunchy outer shell that you would expect in a muffin, they take longer to bake, and they don’t brown.
