Recipe: One Bowl Vanilla Cake: Ice Cream Cake
My family loves ice cream cake, so when dreaming up ways to use our one-bowl vanilla cake, an ice cream dream cake was a must. This one combines soft vanilla cake with tart raspberry sorbet and is topped with lightly sweetened whipped cream. This ice cream cake is the perfect end to a backyard barbecue or a spring or summer brunch. This cake requires just one of the two cake layers that a our one-bowl vanilla cake bakes up.

Recipe: 3-Ingredient Roasted Tomatillo Sauce
Add a spoonful of smoky, roasted tomatillo sauce to your plate and dinner instantly becomes a lot more exciting. Blended together with tangy tomatillos, poblano pepper, and a pop of garlic, this everyday sauce hits your tongue with punchy flavor that’s just the right balance of sweet and smoky, with a hint of heat. One of the first things that seems to come to mind when we think about tomatillo sauce is tacos. It’s an obvious pairing, and one that I cannot recommend enough.

But when you add dried seaweed (yes, seaweed!) to the butter, it turns the simple ingredient into a salty umami bomb you’ll want to munch on any time of day. This recipe comes to us from Chef Ben Jackson over at Drifters Wife in Portland, Maine. The cozy wine bar, known for its natural wine selection, features an inventive menu of small plates that changes nightly.

Our Favorite Freezer-Friendly Containers — For Whatever You’re Freezing
The freezer is the under-hyped miracle worker of the kitchen, allowing you to preserve foods, save money, and plan ahead so that when life gets hectic, you still have a home-cooked meal on hand to heat and eat in a matter of minutes. Of course, your freezer is only as good as the stuff that’s in it. And that stuff is only as good as the stuff it’s in. Are you following? We’re saying the containers for all your frozen leftovers and made-in-advance meals are super important.

Faith’s Favorite Popsicle Molds Solve the Biggest Problems
The other day, our staff got to talking about Popsicle molds. And by talking, I mean complaining! Why are so many of them so terrible? They leak! They take up so much room in the freezer! They don’t release the frozen treat when its time to eat one! There were very few Popsicle molds that our editors said were decent. And then Faith chimed in about these stackable molds from Lekue.

This Cool Ice Cube Tray Is the Best of All Time
Most New York City apartments I’ve seen do not come with ice machines in their freezers. (Sometimes you’re lucky to even get a freezer at all!) So I have spent many hours of my adult life filling, freezing, and emptying ice cube trays — more hours than I’d care to add up, actually. I’ve learned a lot along the years. I’ve learned that flimsier trays are best because they’re easier to twist and get the ice out.

Here’s How Long Ice Cream Can Last In the Freezer (and How to Store It)
True story: I know a guy in Columbus, Ohio, who hangs on to pints of limited-edition flavors by Jeni’s Splendid Ice Creams. Not for days or weeks, but for months and longer. Because, as he’s explained, sometimes you get a hankering for a scoop of Lapsang Souchong with Armagnac Prunes, a flavor that was discontinued years ago.

Here’s How Long Everything Will Last in Your Freezer: A Quick Guide
As long as your freezer is working at its optimal level, keeping food consistently at 0°F, the food inside will be safe to eat indefinitely. There’s no safety concern with anything that’s been properly frozen. The real issue is just how much you’ll actually enjoy it, as some foods might not have the taste or texture you prefer when eating something a year later. Not willing to risk eating leathery meat? We don’t blame you.

5 Things You Should Take Out of Your Freezer Right Now
The freezer’s a handy tool for meal planning, preserving summer produce, and more — but if you’re not careful, it can become a black hole (or perhaps, a bright-white, frosted hole?) full of random food you’ll never eat and things you just stuck in there for no reason. And while the freezer (the fridge, too) does run more efficiently when it’s full, it can’t cool your food off as effectively when it’s packed.

How To Make Veggie Cream Cheese
In my opinion, the best store-bought veggie cream cheese comes from the deli (not the dairy case), where the veggies are freshly added and the bright flavors prove it. This homemade riff takes a strong stance on fresh herbs and vegetables too, while dirtying just a single food processor bowl. The resulting cream cheese is onion-forward with a carrot-rich sweetness and just a touch of fresh dill.

Recipe: Gougères with Fig Jam
Fried jelly doughnuts, called sufganiyot, are a common Hanukkah treat in Israel, and are increasingly popular in the United States. But while homemade doughnuts filled with strawberry or raspberry jam are delicious as a once-in-a-while treat, they make the house smell like fried food and leave a pesky amount of cooking oil behind to dispose of. These gougères, which come sandwiched with fig preserves, offer a savory, sophisticated twist on sufganiyot.

The Best Way to Freeze and Reheat Pancakes
Saturday pancakes do double duty in my house. Their first job is to fill our bellies on Saturday morning, between cartoons and snuggles, but the leftover pancakes have a second life as a quick weekday breakfast during the week. Start with your favorite pancake recipe and make sure the pancakes are fully cooked and cooled before freezing.

Recipe: Soft & Chewy Gingerbread Cookies
Gingerbread cookies have long been one of my favorite holiday treats. I think it has something to do with the fact that they are just so overtly festive (they really only make an appearance between November and December!). But it’s not the little cut-out men that I adore — it’s these soft, thick, chewy rounds sweetened with molasses and coated with crunchy sugar to tame the spicy bite.

This Is the Only Dessert You Should Buy at Target
Target might not come first to mind when you’re shopping for a ready-made dessert. And, to be honest, that’s probably not going to change. There’s just not a huge selection. But when desperate times call for desperate measures and you need a dessert (and a bunch of hangers, a serving platter, and dish soap all at once), your best bet is to make a bee-line for the freezer case. There you’ll hopefully find the Archer Farms Crème Brûlée.

How To Make Ghee Four Ways
Ghee is butter which has been clarified to remove water and milk solids, which imparts a toasty aroma and flavor in the finished butter. Even better? Turning butter into ghee makes it last even longer and makes it suitable for high-heat cooking and roasting, and it even renders it lactose-free for those avoiding it. Ghee is simply butter made even better by a long, slow cook.

6 Frozen Fruits That Are Cheaper than Fresh at Trader Joe’s
My kids love smoothies, so I’ve been tossing those bags of frozen fruit into my shopping cart for years. It’s a no-brainer in the winter, too — of course a bag of frozen strawberries is going to be less expensive than a carton of out-of-season (and probably terrible-tasting) fruit! Plus, frozen fruit makes the smoothie extra frosty. And as nutritionist Marion Nestle points out in her 2006 book What to Eat, freezing food has “no effect on the nutritional value of produce.

The Frozen Foods Kitchn Editors Always Buy at Trader Joe’s
