New potatoes, the tiny first potatoes of the season, can be found from spring through early summer, and I think they are simply the best-tasting potatoes of the year. I use them for many things, but my favorite is potato salad — especially this fresh and easy version, with handfuls of basil and crisp shallots. If you can’t find new potatoes, however, the smallest regular potatoes will do.

Risotto is one of the pressure cooker’s triumphs. It’s a dish that typically requires the cook’s attention from beginning to end, and at least two pans to make (one for simmering stock and one for rice). With a pressure cooker, you get the same creamy results in a fraction of the time (after the initial sauté). The 20-minute-add-broth-simmer-and-stir part of the recipe is reduced to just five minutes of pressure-cooking time.

Side Dish Recipe: Smashed Potatoes with Gouda and Horseradish
I’ve never in my life come across bad mashed potatoes. (I take that back. Potato flakes and a blender are coming to mind.) But usually my taste buds do not discriminate: cream, buttermilk, garlic, and Parmesan are all welcome additions to my favorite spuds, and I will never turn my nose up at cream cheese, truffle oil, even powdered ranch.
