Recipe: Huevos Rancheros Casserole
Huevos rancheros has been one of my favorite egg dishes since I first tasted it in Mexico, nearly 20 years ago. It’s a hearty, satisfying breakfast, which means it can also hold its own for dinner. In this version, huevos rancheros go the way of the casserole with a double layer of corn tortillas, a generous helping of beans and cheese, and the signature spicy-sweet tomato-chile sauce.

I firmly believe that at the center of every Easter brunch spread there should be a savory, eggy casserole that’s served up in slabs and washed down with mimosas. Make this number your celebratory casserole this year. It’s filled with leeks, as an ode to the spring season, and is packed full of crowd-pleasing bacon and cheese. Oh, and it can be made ahead of time, which really just seals the deal here.

This Is the Most Popular Vegan Recipe on Pinterest
One of my favorite things about cooking for groups is finding new recipes that fit my friends’ dietary restrictions. I’m not vegan, but many of my friends are, and finding good vegan recipes that taste good without including eggs, cheese, or other animal products is a fun challenge. I’m a very visual person, so one of my favorite places to look for recipes is on Pinterest.

This Is the Most Popular Make-Ahead Breakfast on Pinterest
Breakfast is too often the meal that gets forgotten, skipped, or phoned in. People say it’s the most important meal of the day, but it tends to take a back seat to getting oneself and possibly one’s family members all out of bed, made presentable, and off to school or work on time. So it’s easy for breakfast to become a cup of coffee on the go or a bowl of cold cereal. Make-ahead breakfasts can be a big help when it comes to actually eating breakfast.

Recipe: Slow Cooker Migas Casserole
Migas are a breakfast favorite in every corner of Texas. I’ve taken the classic skillet migas and transformed them into a low-and-slow, cheesy migas casserole. Put on a pot of coffee, invite a few friends over, and enjoy this migas casserole for brunch. Most breakfast recipes that call for tortilla chips (huevos rancheros, chilaquiles, breakfast nachos, etc.) require poaching or frying eggs, too. Not so with migas casserole.

Recipe: 5-Ingredient Creamy Tomato Baked Orzo
Most pasta dinner recipes begin with bringing a pot of salted water to boil. Here’s your permission to skip that step. Instead, you’ll combine orzo, tomato sauce, baby spinach, and two kinds of cheese in a baking dish and toss it in the oven for 40 minutes. Yes, that’s really it. It’s so simple, you hardly need a recipe, which is a good thing because it’s so comforting and creamy that you’ll likely make it again and again.

Recipe: Skillet Chicken Empanada Pie
As an ardent pie crust lover, it’s only natural that I adore empanadas, the sweet or savory stuffed pastries from Latin America or Spain. They’re usually served at parties or even as a meal, and one of my favorite fillings is chicken with olives. This quick weeknight version reimagines the handheld pastry as a skillet pie, with a bubbling layer of juicy ground chicken cooked with bell peppers, onions, and olives in a savory spiced sauce, all topped with a flaky pie crust.

You’ve Got to Try This Chicken Enchilada Ravioli Bake
If you forgot to meal plan this week and are looking for a last-minute dinner to throw together tonight, allow me to suggest this chicken enchilada baked ravioli. Yes, I did say enchilada and ravioli in the same breath. Why should you have to choose between the two? This recipe brilliantly takes Mexican enchiladas and gives them an Italian twist by subbing cheese ravioli for the traditional corn tortillas. It might sound a bit sacrilege, but this food mash-up is totally worth a try.

Marshmallows on Sweet Potatoes: Who Thought This Up Anyway?
When it comes to holiday meals, I am all about the side dishes. I would happily forgo the turkey, ham, or centerpiece protein altogether in favor of a panoply of starchy, gooey goodness to pile on my plate. And I’m no side dish snob. At Thanksgiving, I crave unpretentious dishes like green bean casseroles, corn puddings, and mashed potatoes choking beneath a pool of butter and gravy. There is, however, one notable exception to my love of traditional Thanksgiving sides.

Recipe: Baked Polenta with Greens and Gruyère
A vegetable-heavy casserole is a must on any Thanksgiving table — and welcome any fall night. Planning a Fall Gathering? Make This Beer-Braised Chicken Pot Pie.

The best part about this recipe is that you can make it all in one oven-safe pot.

Recipe: Cheesy Lentil, Mushroom & Rice Bake
Adding lentils to the dinner roster is a good way to eat meat-free, but all too often they can be boring. This recipe — which adds cheese, meaty mushrooms, nutty brown rice, and plenty of fresh parsley to the mix — solves this. It transforms protein-rich lentils into a comforting baked casserole that really doesn’t need anything else to call it a meal (although a simple green salad on the side would be welcome).

Recipe: Savory Tomato Peach and Tarragon Pot Pie
This is a recipe that will surprise you. Sure, a savory pot pie is nothing new, but we’re throwing peaches into the mix. Tomatoes and peaches actually play off each other’s own sweetness and, when combined with onions and fresh herbs, make for a juicy pot pie that’s at first unexpected, and then incredibly comforting and satisfying. But the real secret is in the crust, and it’s a secret you may find yourself stealing for more recipes than just this one.

Recipe: Rhubarb and Tomato Dumplings
Even without the rhubarb, tomato dumplings are a mystery to those who didn’t grow up eating them. They are an old-fashioned favorite of some grandmas and meat-and-three diners. Juicy canned tomatoes, either home-canned or store-bought, simmer in a fragrant stew that is topped with dollops of biscuit dough that poach in the delicious liquid. Think of them as chicken and dumplings, made with tomatoes instead of chicken.

This dish can be assembled the day of, but it’s actually best if everything up until the actual cooking is done the night before.

You’re Only 6 Ingredients Away from This BBQ Chicken-Quinoa Casserole
I’m a big fan of casseroles. I mean, what’s not to like about throwing all the ingredients into a dish, putting it in the oven to bake, and then bringing it right to the table to serve? But with the onset of spring, I’m ready to say goodbye to super-heavy casseroles and embrace slightly lighter versions. This BBQ chicken casserole — with quinoa, black beans, and corn — fits the bill perfectly.

In Defense of Dump-and-Bake Casseroles
In the Midwest (where Superman and Bob Dylan are from, BTW), a casserole is not just a one-pan meal. It is how we cook, how we gather, and even how we think — a potluck attitude where everybody is expected to bring something to the table.

While the casserole is baking, you can prep the toppings: feta, cherry tomatoes, cucumber, Kalamata olives, and fresh parsley.

Recipe: Christmas Morning Banana Strata
This year, my family felt like switching up some of our holiday traditions – just a few tweaks to keep things interesting. One such update is to swap our typical Christmas breakfast of ham and cheese strata for a pleasantly unexpected banana version. This banana strata trades in sharp cheddar for rich and creamy mascarpone cheese, flecked with vanilla bean. While reminiscent of bread pudding, its more subtle sweetness makes it decidedly breakfast fare.

Recipe: Swiss Chard and Sausage Bread Pudding
When I invite friends over for dinner, I always swear to myself I’ll have dinner all ready and the kitchen cleaned up when they arrive, but more often than not, we drink our first glass of wine together while I’m still working at the stove and shoving dishes in the sink. Unless, that is, I remember to pull out this recipe. Then I’ve got dinner in the oven and I’ve had time to clean up before they even walk in the door.

Recipe: The Best Scalloped Potato Casserole with a Pesto Twist
In my family, we take two things pretty seriously: Easter brunch and the Easter egg hunt. Not only does Easter get me excited about spring, but also quality family time and a killer meal. For the egg hunt, we do a mixture of plastic and real dyed eggs, and we recently added the very exciting golden egg. My brother-in-law started this tradition with our family. The golden egg is a plastic egg with money in it.

Recipe: Chicken, Broccoli and Brown Rice Casserole
In the past, the word casserole might have referred to a “let’s raid-the-fridge” recipe, or maybe an “open-mix-and-bake” sort of meal. But casseroles have finally come of age and can be sophisticated on their own accord. There’s a reason casseroles have been reigning supreme, since, well the beginning of time. What’s not to love about a hot and bubbly one-dish meal?!

Oyster Dressing, Just Like My Mother (and Grandmothers) Made
This Thanksgiving, we’re doing something different. After sharing almost every Thanksgiving of my life with my parents, I was at a loss this year because they’re both now gone. I am (so very, very) lucky to have a dear friend who is willing (enthusiastic, even!) to lump us in with her family for the holiday, and I can’t wait. (She throws a great party, and this will be no exception.) I offered to bring the oyster dressing, and planned to use my mom’s recipe.

Here Are 4 Ways to Use Up Your Leftover Gochujang Pepper Paste
I recently bought a tub of gochujang to make these kimchi deviled eggs for a party. I’ve never used the condiment before, but quickly learned it was an incredible thing to work with. Recipe: Quinoa & Winter Squash Bake
When we think of meatless sources of protein, foods like beans, tofu, and cheese generally top the list. But one of my favorites is quinoa (shark-jumping be darned!) — not only is it a delicious and complete protein, but it’s also rich in iron and fiber, vegan-friendly, gluten-free, and unprocessed. For ethical farming reasons, I always make sure to buy Fair Trade quinoa. This season I’m baking quinoa into a savory pie with roasted winter squash and aromatic herbs and spices.

8 Ways to Eat a Loaf of Bread for Dinner
Remember when everyone could eat bread? With more and more people avoiding gluten, bread has become a guilty pleasure at the dinner table, even for those of us who can tolerate it just fine. One of the remarkable things about this savory potato and leek galette is that it looks fancy, yet the ingredients are simple and inexpensive. Recipe: Enchiladas de Pipián Rojo
Every Halloween I like to cook something warm and pumpkin-y for dinner. In Mexico, pipián is a type of mole or sauce served with meat or over enchiladas. Made with ground seeds or nuts, it may be green (verde) or red (rojo).

Oyster Stuffing: Is it Worth All the Shucking?
We’ve never had oyster stuffing. Have you? Whoa, it’s a lot of work if you’re talking about shucking dozens of fresh oysters to chop and bake with your bread cubes. But the payoff (we hear) is that the bread soaks up the oyster liquor, and you get a richness that’s beyond what sausage or a little chicken broth can offer. As for the origins of oyster stuffing… it’s complicated.

Martha Stewart’s Macaroni & Cheese: The Ultimate Recipe?
Homemade macaroni and cheese is almost always a Good Thing, but is Martha Stewart’s recipe perhaps the best of all? Food52 has declared it a “genius recipe” One of the key elements is the mornay sauce that surrounds and permeates the pasta as it bakes. Flour, butter and milk are cooked into a béchamel to which grated sharp cheddar and Gruyere are added, resulting in a rich, creamy sauce that won’t break down during baking.
