Before you start quaffing margaritas tomorrow, it might be a good idea to have a full belly, no? Sunset has a slideshow of 20 great Mexican meals, and there are some off-the-beaten-path alternatives to the usual stuff. Go take a look...

We all know how to make a quesadilla, and they've got those, too, but we were more interested in the Shrimp, Ancho Chile, and Pasta Soup (above, left) and the Halibut Baked in Fresh Green Salsa. There was also a Mexican Chopped Salad with all kinds of crunchy ingredients (jicama, radishes, green cabbage) and an orange crema.

And then there are the usual suspects, like Grilled Skirt Steak (above, right), enchiladas, and nachos. Whether you are throwing a full-on fiesta or just want something elegant for one or two, you should be able to find something here.
