A rule of thumb when cooking with wine is to only use wine that you would drink on its own — which is why I am pouring myself a tall glass of Pinot Grigio while I make this chicken pasta with creamy white wine Parmesan sauce tonight.
Yes, this strange thing called *cooking wine* objectively exists, but why would anyone pass up the opportunity to cook with wine that also happens to be drinkable? Now go ahead — grab your skillet and treat yourself to the home cook’s equivalent to a shower beer while you make your family’s new favorite weeknight dinner.
The first thing you should do is heat up your skillet before adding oil — this step will help to avoid any food from sticking. From there, place floured and seasoned chicken breasts into the pan and get them nice and cutlet-y.
Once the chicken is fully cooked through, remove the chicken from the pan and prepare the creamy white wine Parmesan sauce with butter, diced onion, minced garlic, scallions, diced tomatoes, flour, heavy cream, wine, and seasonings. Let this simmer until reduced and then add in shredded Parmesan cheese.
In the meantime, prepare a box of spaghetti and then assemble the skillet by adding in the cooked pasta and chicken to the sauce. Cleanup is very minimal, and to that I say cheers!
