That’s why I was inspired when I saw these cheesy stuffed sweet potatoes from Averie Cooks. It’s a pretty easy and healthful meal, and there’s a grocery store shortcut from Trader Joe’s that super smart. It’s the kind of dinner you’ll want to make over and over again.

So, the recipe. You cook your sweet potatoes in the oven (or microwave) and mash up the insides to make room for the other ingredients. Then you stuff it with Trader Joe’s Cowboy Caviar, which is essentially a mix of black beans, corn, onion, and red bell peppers mixed in a chipotle adobo sauce. Delicious, right? Then you top the stuffed potatoes with shredded cheese and put them under the broiler so everything gets nice and melty. The blogger behind Averie Cooks then tops the melty meal with a homemade avocado crema.

This is the exact kind of meal I’d want to make when I didn’t really want to cook. The only thing you’re really making is the avocado crema — and even then, if you’re feeling lazy, I feel like you could just used sliced avocado instead?
