This Cheesy Mushroom Chicken Is a Breeze to Make
The other night I sat down at my kitchen table, at the end of a long work day, and tried to brainstorm dinner recipes that would not sap the very little motivation I had left. I love to cook, but trying to prepare meals every night can be exhausting. I’m still figuring out how to put creative, nutritious dishes on the table without spending my entire night at the oven. And that’s why I’m so excited about this recipe for baked cheesy mushroom chicken. It looks tasty, infused with richness of mushrooms and fresh herbs, but it won’t take much effort on my part to make.
Chicken breasts are the star of this dish. First you brown them quickly in a pan, then place them in a baking dish. Next, you’ll make your topping. Personally, I’m always intimidated by a sauce (will it thicken? Is it creamy?) but this one is stress-free. Add mushrooms and chicken broth to the same pan in which you browned the chicken, and simmer until the mushrooms are tender. Cremini mushrooms work great here.
Once the mushroom sauce is done, pour it over the chicken, then bake for 15 minutes. Then it will be time to add the cheese. Since you’ve already got the savory, almost-meaty flavor from the mushrooms, mozzarella cheese will be your best bet. Sprinkle some of the shredded variety on top of the chicken, then bake for five more minutes, or until the cheese has melted.
I love the simplicity of this recipe. There aren’t many ingredients involved, but it’s still packed with salty, savory flavors that both nourish and satisfy. On the evenings when I need a break from cooking a complicated dinner, but still want eat a meal that will make everyone in my house happy, I’ll remember this recipe.
