Canned artichoke hearts are very underrated. Not only are they trimmed and prepped for you, they’re also super flavorful, versatile, and inexpensive. Wins all around. So it shouldn’t come as a huge surprise that when I saw cheesy, breaded artichoke patties in a TikTok video posted by user Kathyquad123, I immediately felt compelled to give them a whirl. It’s time for canned artichoke hearts to have their moment in the social media sunshine. If you’re ready to hop aboard the artichoke bandwagon, follow along.

How to Make Artichoke Patties

To get these patties going, drain and coarsely chop up three (15-ounce) cans of artichoke hearts. Then, mix the chopped artichokes with 2 whisked eggs, 1 cup grated Parmesan cheese, 1 cup breadcrumbs, 1 teaspoon garlic powder, and a big pinch of both salt and pepper.

In the video, the cook mixes together all of these ingredients and after looking at the mixture, decides it needs more breadcrumbs. She conveniently has a breadcrumb assistant who quickly pours in a scant handful of additional breadcrumbs. So — if the mixture looks like it needs a bit of help holding itself together, add some more breadcrumbs.

Once everything is nice and incorporated, you’ll take an ice cream scoop and form a sphere-like shape with the mixture. Then, take a small knob of fresh mozzarella and press it into the center of the sphere, fully enclosing it. Press the ball into a flat patty and toss the outside in breadcrumbs. Repeat with the remaining mixture.

To cook the patties, heat a mix of oil and butter on the stove over medium heat and cook the patties until they’re golden brown on both sides. Transfer the patties to a paper-towel lined plate, and serve ‘em while they’re hot.

My Honest Review of TikTok’s Artichoke Patties

I didn’t need to make these to know that they’d be abso-freaking-lutely delicious. Not only are cheese, breadcrumbs, and artichokes an unrivaled trifecta, but anyone with that thick of a New York accent surely knows their way around the kitchen. The second I heard her say “awtichoke hawts” and “muhzzarell,” I knew I was in good hands.

I would definitely make these again for a fun dinner party appetizer or game day snack. I found them to be quite easy to make, and they required mostly pantry ingredients. I also appreciated that there wasn’t a ton of excess oil after they were done frying, so clean up wasn’t too bad, either.

3 Tips for Making These Artichoke Patties

  1. Make a dipping sauce. These patties don’t need a sauce, but they would be even more delicious with a garlic aioli or simple marinara dip.
  2. Don’t sweat the measurements. One thing that I really appreciate about a lot of recipes on TikTok is that the measurements are not so important. Embrace that mentality for these patties. If the mixture can hold itself together, it has enough breadcrumbs. Taste it for seasoning, or if you’re nervous about raw egg, throw a small practice patty on the skillet and make sure it’s adequately seasoned.
  3. Cook over medium heat. The key to timing these patties perfectly is cooking them on medium heat so that they get nice and golden brown on the outside and the mozzarella on the inside is able to melt. If the heat is too high, the outside of the patties will be fully cooked before the inside is warm and gooey. Medium heat will buy you enough time for that quintessential cheese pull.
