Today is National Pumpkin Cheesecake Day, and since the weather is uncharacteristically warm for October, we're celebrating with a no-bake version.
This dessert is essentially a layered pudding. The base (or "crust") is crumbled cookies mixed with butter, and the filling is a mixture of cream cheese, powdered sugar, pumpkin purée, vanilla, pumpkin pie spice, and whipped topping (like Cool Whip). After chilling the dessert for a few hours in the fridge, you can top it with more Cool Whip or whipped cream, salted caramel sauce, and crushed cookies before serving.
While hopefully it will be a little bit cooler in November, this is also a great recipe to bookmark for Thanksgiving. You'll still get that pumpkin flavor everyone craves, without taking up valuable oven real estate on the big day.
