These New Cauliflower Tortillas Actually Sound Super Delicious

By now it’s pretty clear that cauliflower can be turned into just about anything if you set your mind to it. You can use it as a substitute for chicken, or to make a lighter version of mac and cheese, and even as a replacement for rice. Just when you thought we’d reached peak cauliflower, a new grocery product comes into town and totally blows our collective minds: cauli tortillas!

Last week CAULIPOWER announced that they’re launching a new frozen, ready-to-make cauliflower tortilla in two varieties. The company, which is known for its pizzas, pizza crusts, and sweet-potato bread substitutes, will be selling their brand new cauliflower tortilla products starting in February at select supermarkets and on Amazon.

“CAULIPOWER tortillas are the gluten-free solution to quesadillas, burritos, tacos, wraps and more, with fewer calories, less fat, more fiber, and Vitamin C,” says CAULIPOWER in a press release. These new tortillas proudly tout cauliflower as the first ingredient, meaning these are authentically cauliflower-based and aren’t loaded with other ingredients. “The new products are wheat and dairy-free, vegan, Non-GMO, and preservative-free.”

The tortilla company offers two types: an original version that contains cauliflower, corn masa (dough made from corn flour), yeast, salt, baking powder, guar gum, and xanthan gum, and a grain-free version that substitutes the corn masa for chickpea and cassava flours, coconut oil, and flaxseed meal for gluten-free folks. Both are frozen foods but can be cooked and used just like regular tortillas.

At a serving size of two tortillas, the original flavor has 120 calories, 1g fat, and 3g fiber while the grain-free version has 140 calories, 4g fat, and 3g fiber. So if you’re looking for a healthy substitute to make gooey cheese or spinach quesadillas for dinner, February isn’t far away at all.
