When cauliflower rice first became popular a few years ago, I think we all believed it would be a short-lived trend. Well, we were obviously wrong: The light and fluffy grain-free substitute for rice isn't going anywhere anytime soon, and I am more than OK with that.

While it's a great option for those on a gluten-free or Paleo diet, it's really a smart choice for all eaters, as it's such an easy way to add more vegetables to your diet. Here are seven of our favorite ways to enjoy it.
