Cauliflower Mash with Meatballs and Gravy Is a Dinner Win

When I first came across this recipe from Ev’s Eats I did a double take. There is absolutely no way that those meatballs aren’t resting on a glorious bed of fluffy mashed potatoes, right? Right?
Well, my friends, I was very wrong. These meatballs are not, in fact, resting on a glorious bed of fluffy mashed potatoes. They’re floating on a cumulus cloud of buttery cauliflower mash instead. And they’re low-carb and keto to boot. Is butter a carb? No it is not, thank goodness. Now where do I sign up?
To make this dish (which has been sent to us from the low-carb powers that be), you will need a pound of cauliflower, butter, Parmesan cheese, avocado oil, ground beef, garlic, onion powder, egg, mustard, Worcestershire sauce, beef stock, and heavy cream. If this does not sound like an ingredient list that should correspond with any kind of diet, please know that the keto diet is fundamentally different than most diets, relying heavily on fats and cutting out most fruits, starchy vegetables, grains, legumes, and sugars.
That’s why low-carb cauliflower is the perfect substitute for starchy potatoes. To achieve cloud-like consistency, first steam the cauliflower until tender and then transfer to a food processor. Purée along with salt, pepper, butter, and Parmesan cheese until smooth.
In the meantime, make the meatballs and cook in a skillet until browned on each side and cooked through. In the same skillet, make the velvety gravy which will blanket the meatballs and mash. Is this what heaven looks like?
