This Coconut Cauliflower Curry Is a 30-Minute Miracle

There are certain words right now that make me stop in my tracks when I see them on a recipe. “Peanut” is one of them, and so is “coconut,” and also anything with “cauliflower.” Well, guess what? The recipe I’m featuring today has all three of these things. Lucky me! And lucky you.

This Thai-inspired peanut coconut cauliflower curry from Ambitious Kitchen hits all the right spots. It’s warming and spicy, and the whole thing comes together in one skillet. There’s a good chance I’m making this for dinner tonight.

This recipe is all about coconut, spices, and creamy nut butter. The cauliflower — like cauliflower is known for — just absorbs all these flavors. Such a team player!

So, basically you cook some vegetables in a little coconut oil (garlic, cauliflower, green onion, carrot) and then you add coconut milk, broth, peanut butter, and curry paste to the mix along with some spices. Then you add chickpeas and bell peppers and let the mixture go for 10 minutes. You then add some peas, and wait another minute before serving. Ambitious Kitchen also recommends garnishing your dish with chopped peanuts and cilantro.

I can see this being great over rice or quinoa if you want to extend the life of the dish for meal prepping purposes, or just serve it on its own for dinner.
