Here’s How to Make the Quickest Thin-Crust Pizza in Your Cast Iron Pan
A person with a pack of tortillas in the fridge will never want for a midnight snack. As long as you have tortillas and some cheese — any cheese, really — you’ll have an answer to the problem of wanting something to eat while watching late-night weekend TV. Just put the cheese on the tortilla, microwave it for 15 to 20 seconds, and your snack problems are sorted. And with a bit of olive oil spray and a cast iron pan, you can even turn those tortillas into the fastest, easiest, thin-crust pizza you’ll ever see.
Tortilla pizzas are almost as easy as microwaved quesadillas. Just spray the cast iron pan with a bit of the olive oil and toast the tortilla lightly on both sides to make it crisp. Then cover one side of the tortilla with marinara sauce, cheese, and whatever toppings you like, and put the whole cast iron pan in the oven for a few minutes. Wait until the cheese is fully melted and the edges of the tortilla turn golden brown and crispy, then take it out of the oven and put it back on the stove for just a minute more, to make sure the bottom of the “pizza” is nice and crisp as well as the outside edge. Then take it off the stove, and as soon as the pizza is cool enough to eat without burning your mouth it’s ready.
This is also a very fast way to make gluten-free pizza. Just use your favorite gluten-free tortilla.
As with all pizza, you can top this with literally anything you like. Add hot honey to a Margherita pizza like the author suggests. Replace the marinara sauce with barbecue sauce and cover it with shredded chicken and Cheddar cheese. Cover the whole thing in gummy bears if you want, because you’re a grown-up now and you can do what you want.
