Just as the holidays disappear behind us and it gets even colder outside, citrus comes into season and brightens all of our meals. This recipe makes full use of the oven, caramelizing the thinly sliced oranges and lemons so they become soft and wonderful. Add some roasted chicken into the mix and you have dinner.

They key to roasting whole-sliced citrus, as the blogger behind The View from Great Island explains, is to really wash the fruit ahead of time and make sure to take out the seeds from the slices of fruit. If you’re not getting that nice charred look on the fruit, run them under the broiler before serving.
