This New Gluten-Free Pancake Mix Sold Out in Days — And It’s Finally Back in Stock

I have long been a fan of CAP Beauty. The brand — which sells its own line of products, in addition to various skincare and pantry items from other brands — has its finger on the pulse of all things beautiful and luxurious. While the matcha, coconut butter, and date-sweetened chocolate bar (made by Spring & Mulberry) are all exceptional, the product I’m most excited about is the new collaboration with Los Angeles cafe Honey Hi. 

The Pancake Mix debuted in February and sold out within a few days. I was lucky enough to try the mix before it sold out after its release, and it’s been out of stock for months. But the good news is that it’s back in stock as of today! Here’s why you’re going to want to snag a bag for yourself.

What’s So Great About CAP Beauty + Honey Hi The Pancake Mix?

The first thing I’ll say about this pancake mix is that it’s gluten-free, which appeals to me, as I follow a gluten-free diet. But my husband, who does not follow a gluten-free diet, was in agreement that these are some of the best pancakes he’s ever tasted.

I credit this with the carefully chosen ingredients — like Carolina gold rice flour, toasted oat flour, and mochiko sweet rice flour — that make up the base of the mix. CAP’s own coconut butter and Himalayan pink salt are also in there, along with coconut sugar. All you need to add at home are some eggs, the milk of your choice (I used cashew milk), and vanilla extract, plus the cooking oil of your choice to fry them in (I used olive oil).

The result is a crispy-crunchy exterior that gives way to a soft, fluffy interior. The coconut butter and coconut sugar are so subtle that there is no pronounced coconut flavor — only a rich, nutty butteriness and a whisper of sweetness.

What’s the Best Way to Use CAP Beauty + Honey Hi The Pancake Mix?

I made the entire bag and enjoyed some in the moment — warm with a generous pour of maple syrup — and then froze the rest for easy breakfasts during the week. (There’s nothing that makes you feel like more of a superhero than pulling out a couple of pancakes to reheat in the toaster oven on a Wednesday morning, and seeing the delight in your toddler’s eyes upon his first bite.)

The mix, which costs $22, is definitely more expensive than what you might encounter in the grocery store — especially when you factor in shipping costs. (Although CAP offers free shipping on orders over $100, which is quite an easy number to reach once you start clicking around on the website!) Although the yield listed for the full bag is 12, I made our pancakes slightly smaller (by using a 1/4 cup scoop instead of the recommended 1/3 cup scoop), which gave us 15 pancakes total. I view this mix as a special way to make our mornings a bit more magical. I don’t currently have the time or energy to source the ingredients and make a pancake base like this myself, so for me it’s totally worth it.
