Q: Since it's about to be summer, we'd like to take advantage of fresh, seasonal produce and cook more vegetable dishes at home. The problem is we're not too inspired by and not very creative with vegetables. What cookbooks do you recommend that really hit it out of the park with vegetable recipes?
We're not looking for vegetarian/vegan cookbooks, per se. We're really looking for a book that uses vegetables in exciting ways (i.e., not another salad) and don't rely too much on frying. Are we asking for too much?

Editor: You're definitely not asking for too much, Daniel! There are some really fantastic cookbooks (both vegetarian, and not) that do a great job of showcasing vegetables. A few that immediately jump to mind are all of Ottolenghi's books, Eat Your Vegetables by Joe Yonan, and Tender by Nigel Slater. Here are a few more ideas to inspire you:
