Cajun Shrimp and Vegetable Foil Pack

Foil-pack meals may well be the easiest single-serve meal you can make: easy to make, easy to cleanup, easy to customize for whatever you have on hand. Here, we’ve used yellow squash, red peppers, and onions, but just about any quick-cooking vegetable, like zucchini, asparagus, or green beans, will work. In total, there are just six ingredients, all of which get wrapped in aluminum foil and cooked directly on the oven rack for about 10 minutes. Dinner done, in 20 minutes .

How to DIY Creole Seasoning

These packets are flavored with store-bought Creole seasoning, but if you don’t have any on hand, you can easily make your own: Stir together 2 1/2 tablespoons paprika, 2 tablespoons kosher salt, 2 tablespoons garlic powder, 1 tablespoon freshly ground black pepper, 1 tablespoon onion powder, 1 tablespoon cayenne pepper, 1 tablespoon dried oregano, and 1 tablespoon dried thyme. This will make enough to keep in an airtight container in your pantry, and use to flavor seafood, chicken, and pasta.

  • 1/2

    medium summer squash, diced

  • 1/2

    small red bell pepper, seeded and chopped

  • 2 slices

    yellow onion

  • 4 ounces

    raw medium shrimp, peeled and deveined

  • 1/4 teaspoon

    Creole seasoning

  • 1/4 teaspoon

    freshly squeezed lemon juice

Instructions

  1. Arrange a rack in the middle of the oven and heat the oven to 375°F.

  2. Place all the ingredients on a large piece of aluminum foil, then fold up and press the sides together to create a sealed packet.

  3. Place the packet directly on the oven rack and bake 10 minutes. Remove the packet from the oven, carefully open (watch out for steam!), and enjoy while hot.
