This Buffalo Chickpea Chili Is Loaded with Veggies
Growing up in the heartland of the Midwest, I come from a family who loves their chili thick and packed full of just about everything. I have a hard time loving chili from other people, as it’s often just a sloppy mix of beans and meat and doesn’t remind me of home. This chili, however, is so packed full of awesomeness it’s hard to go wrong. As a bonus, it has an unusual flavor profile that makes it reminiscent of some of my favorite tailgating foods.
To start, you mince some mushrooms and then sauté them with onions, carrots, and celery. Next you add all of the seasonings, sauce, tomatoes, and chickpeas. You only need to cook things long enough to bring the flavors together, but you can simmer it longer if you wish — just make sure your carrots are softened and you’ll be all set for some hearty chili. I have a feeling I’ll be making this time and time again this winter!
