Use store-bought conveniences — like rotisserie chicken and coleslaw mix — to ensure minimal prep. Enjoy them for lunch or a light dinner, or add them to your meal prep roster. The wraps can be assembled and refrigerated for a handful of days, ready to go when you or a hungry family member need one.

The Quickest Way to Make Buffalo Chicken Wraps

While a lot of recipes for Buffalo chicken wraps call for cooking the chicken yourself, this recipe takes the easy way out and utilizes a rotisserie chicken. Simply shred the meat, toss it in a quick three-ingredient Buffalo sauce, and you have Buffalo chicken in minutes.

The lazy road doesn’t stop there. A bag of coleslaw mix saves you the hassle of shredding or slicing a head of cabbage yourself. Toss it with a bit of Greek yogurt and lime juice, along with lots of blue cheese crumbles, and you have an instant slaw to add crunch and creaminess to your wraps.

How to Make These Wraps Ahead of Time

What’s great about this recipe is that while it’s fast enough for last-minute hungry pangs, it’s also make-ahead-friendly. Assemble the wraps, individually wrap them tightly in aluminum foil, and store them in the refrigerator for up to four days. They’ll stay fresh without losing much crunch or character.

The Best Hot Sauce for Buffalo Chicken

While Franks RedHot is the most traditional hot sauce used to make the sauce of Buffalo chicken, I actually prefer Cholula, which I find to be spicier, brighter, and overall just a bit more interesting (although any bottle can be used for this recipe).

  • 1

    small or 1/2 large plain rotisserie chicken (about 1 3/4 pounds)

  • 6 tablespoons (3/4 stick)

    unsalted butter

  • 1/2 cup

    hot sauce, such as Franks RedHot or Cholula

  • 1/2 teaspoon

    garlic powder or garlic granules

  • 1

    medium lime

  • 3 tablespoons

    whole milk plain Greek yogurt or sour cream

  • 1 tablespoon

    olive oil

  • 1/2 teaspoon

    kosher salt

  • 1/4 teaspoon

    freshly ground black pepper

  • 5 packed cups

    coleslaw mix (from one 12 to 14-ounce bag)

  • 4 ounces

    blue cheese

  • 6

    (9 to 10-inch) burrito-sized flour tortillas

Instructions

  1. Shred the meat from 1 rotisserie chicken until you have 4 packed cups, discarding any skin and bones. Place in a large bowl.

  2. Melt 6 tablespoons unsalted butter in a small saucepan over medium-low heat. Turn off the heat. (Alternatively, microwave in a small microwave-safe bowl in 4 to 6 (10-second) bursts until just melted.) Add 1/2 cup hot sauce and 1/2 teaspoon garlic powder, and whisk until combined. Pour over the chicken and toss to coat.

  3. Squeeze the juice from 1 medium lime into a large bowl (about 2 tablespoons). Add 3 tablespoons whole milk plain Greek yogurt or sour cream, 1 tablespoon olive oil, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper, and whisk to combine. Add 5 packed cups coleslaw mix and toss to coat. Crumble 4 ounces blue cheese into the bowl (about 1 cup) and toss to combine.

  4. Stack 6 (9 to 10-inch) flour tortillas on a microwave-safe plate and cover with a damp paper towel. Microwave until warm, 30 to 45 seconds. Wrap the stack in a clean kitchen towel or aluminum foil to keep warm.

  5. Assemble the wraps one at a time: Place about 1 cup of the blue cheese slaw slightly below the center of 1 tortilla and spread into an even layer, leaving at least a 1-inch border. Top with a heaped 1/2 cup buffalo chicken. Roll tightly like a burrito by folding the sides over the filling, then rolling from the bottom up. Cut in half crosswise if desired.
