Make These Buffalo Cauliflower Tacos for Taco Tuesday

Happy taco Tuesday! If you’ve been making the same ground beef tacos for months now, I have an exciting proposition for you: Skip the meat and make these Buffalo cauliflower tacos instead. With spicy cauliflower, crunchy slaw, and creamy avocado sauce, you won’t miss your usual tacos one bit.

The first thing you’ll have to do for this recipe is batter the cauliflower. Simply dip cauliflower florets in a mixture of flour, milk, salt, pepper, and garlic powder; set it on a lined baking sheet; and bake it for about 20 minutes. Then you toss the cauliflower with your favorite hot sauce and put it back in the oven for a bit.

While the cauliflower is baking, you can whip up your avocado crema in a blender or food processor. With avocado, garlic, sour cream, salt, and lime, this crema is exactly the sauce you need to mellow out the super-spicy Buffalo cauliflower. You’ll toss some of the crema with bagged slaw and save some for the tacos.

When you’re ready to eat, simply warm up some tortillas and then load them with cauliflower, slaw, crema, and fresh cilantro. Don’t forget the margaritas!
