For most people, breakfast is meant to be the quickest and easiest meal of the day. Unfortunately though, that also might mean sacrificing taste. While there are delicious and easy recipes that you can make for breakfast like Crispy Air Fryer Breakfast Potatoes and Peanut Butter Oatmeal, if you have a few extra minutes to spare in the morning, Butter Be Ready‘s recipe for Brussels Sprout Quiche with Bacon & Goat Cheese is one you need to add to your list.

Also calling it “meal prep goals,” followers of the account didn’t hesitate to share their excited thoughts about the breakfast option. “The ultimate quiche 😍👏,” one commenter wrote.

Now I’m sure you’re probably saying, “OK, that looks good and all, but what do I need to make this for breakfast this weekend?” Luckily, this recipe really is super easy, so with the exception of a few ingredients, you likely have majority of them already at home.

This recipe, which takes a total of 55 minutes to create (20 minutes of prep and 35 minutes of cook time), requires thick-cut bacon, Brussels sprouts, eggs, whole milk, maple syrup, and both grated Parmigiano Reggiano and goat cheeses. Of course, no recipe is truly complete without seasonings too, so you’ll also need kosher salt and pepper, garlic, onion powder, and — depending on your preference — crushed red pepper flakes. And according to the Butter Be Ready blog post, you have the option of using either a homemade or store-bought pie crust/shell.

After pre-heating your oven to 400°F, you’ll cook your bacon in a skillet and after removing, add your Brussels sprouts to the pan to do the same. Throw in your seasonings and combine them fully before removing from the heat. Then, in a large bowl, you’ll whisk together your wet ingredients (including the maple syrup) and add in the grated Parmigiano Reggiano cheese.

Right before placing it into the oven, you’ll add the Brussels sprouts to your pie shell first, then add your bacon — reserving some for your topping — and pour the egg mixture into the shell as well. Top with goat cheese, swirl together, and add more bacon for your pleasure. Your quiche will bake for 35 to 40 minutes, and after it cools for another few minutes, you’ll be ready for a flavorful breakfast that the entire family will enjoy.
