Once you get a handle on how to make perfectly juicy pork chops (it's not hard, promise!), it's time to try out some fun variations. Now, these variations don't need to be complicated. This is Kitchn, after all, and we're all about finding the smart tips and recipes that deliver on flavor but also aren't, well, fussy.
So that's why I was excited when I found this brown butter and herb pork chop recipe from Innocent Delight. It's a bit unusual with the brown sugar, so I was immediately intrigued, but it also seemed doable.
This recipe claims to only take 15 minutes to make on an average weeknight, which is essentially nothing. Washing the dishes probably takes longer than making the actual meal. Fifteen minutes is less time than I spend on Instagram before I get out of bed in the morning, so you can do this. Sure, you can add an extra half an hour to the whole thing by choosing to brine your pork chops before cooking them, but again, if you're in a rush, you don't need to do this.
For two pork chops you need brown sugar, garlic, fresh oregano and thyme, and butter (duh). You essentially sear the pork chops, cover them in the brown sugar mixture, and then put the skillet in the oven for a few minutes until cooked through. Innocent Delight suggests you serve these chops with her cacio e pepe zucchini noodles or her potato leek casserole.
