These Blondies Have a Surprise (Umami-Rich) Ingredient

If you have a sweet tooth, blondies always hit the spot. But these blondies are a bit more special than your average recipe. With ingredients like brown butter, walnuts, miso, and dark chocolate, I can guaruntee you’ve never had blondies quite like these.

These blondies only call for nine ingredients — butter, brown sugar, white miso paste, eggs, vanilla paste, flour, baking powder, dark chocolate, and walnuts — but they pack a big punch.

By browning the butter first and then adding in brown sugar and miso, these blondies are rich with umami flavor. There’s an underlying caramel note (thanks to the brown sugar) and a nuttiness that’s echoed by the toasted walnuts. As a brownie fan through and through, I appreciate the addition of chopped chocolate here too.

If you really want to seal the deal, generously sprinkle the top of these blondies with flaky sea salt when they’re warm from the oven. Pure bliss!
