This Broken Lasagna Recipe Is a Dinner Life-Saver

Once, I decided it was a great idea to make a few lasagnas entirely from scratch — rolling out the pasta, making the sauce, assembling them — so I could freeze them to have for later, all while herding my toddlers away from any sort of trouble they could get into. Each time I pulled one out to eat it, the taste was incredible, but tainted with the sweat and tears that went into it. Each bite reminded me of the day of my life I spent putting it together, rather than letting me enjoy the fact that I did not, at that point in time, need to do anything for the delightful meal. Needless to say, I have not repeated this operation, and I will not until I am confident my children can actually be helpful. 

In the meantime, I am always on the lookout for easier ways to make lasagna happen, and this recipe for broken lasagna from Hip Foodie Mom seems like just the ticket. “This is a really easy and delicious meal,” says Alice. “It’s perfect for when you want a lasagna-like dinner but don’t have time to make a real lasagna.” 

She got the idea from a Martha Stewart post on Instagram, but added her own twist. Basically, you just make the sauce — a sausage and beef tomato sauce, in her case — then break up the lasagna noodles and cook them. Then you stir the noodles into the sauce, and you’re done. If you crave the baked cheesy goodness of lasagna, she recommends adding a few handfuls of shredded mozzarella, too. “This recipe has definitely been a life-saver for me!” Alice says, giving me hope that it will be for me, too.
