This inaugural edition celebrates its namesake: Castelvetrano olives (or as they are called before being cured as eating olives: Nocellara del Belice). The Sicilian variety is a favorite when it comes to snacking due to its balanced buttery taste, large size, and bright green color. Thanks to Brightland’s collaboration with a single-olive estate in Paso Robles, CA, we can now enjoy these crowd-favorite olives in oil form.

Because only 1,200 (numbered) bottles were made, I was honored and delighted to try one out. Bottom line: This olive oil is unlike any other I’ve tried. It’s tart yet earthy, endlessly complex, and a bit peppery — almost like a good arugula. I tastes green, just like the olives from which it was pressed. Unlike other EVOOs that can lack any actual olive flavor, CASTELVETRANO captures the essence of the fruit in its truest form.

I plan on drizzling CASTELVETRANO over all my spring and summer snacks, like Burrata, watermelon salad, cornbread, and so much more. If you want to score a bottle for yourself, you’d better act now.
