Bowl of the Week: Bolognese + Potatoes + Kale
- Base: Roasted tiny potatoes
- Middle: Homemade bolognese
- Top: Shredded kale and Parmesan
One of my favorite ways to do lunch (and dinner, for that matter) is to go bowling. Pick a bowl, and start piling. Layer grains at the bottom and leftover roasted veggies in the middle. Or turn it upside down and start with broccoli slaw and add some chicken. At the end you’ve got a one-dish meal, built from this and that — a creative improvisation rather than a recipe. We’re going to start bringing you our weekly bowls — and we’re looking for the best of yours too!

The Weekly Bowl: Bolognese Over Potatoes
This bowl happened when I defrosted a portion of bolognese I made earlier in the winter. When going to the trouble of a real bolognese, I usually make an enormous batch and freeze a lot of it. I defrosted about two cups and used some for my lunch and some for my husband’s. But I wasn’t in the mood for pasta; instead I roasted a bunch of potatoes on Sunday night and used them for lunches throughout the week. A little flurry of Parmesan and kale topped it off for a super satisfying lunch.
