- 2 pounds
heirloom tomatoes (about 6 medium), preferably a mix of colors
- 1 teaspoon
sherry vinegar
- 1 1/2 teaspoons
extra-virgin olive oil
Flaky sea salt
Freshly ground black pepper
- 1/2 cup
loosely packed fresh tender herbs, such as parsley, basil, cilantro, dill, tarragon, or a combination
- 1
(5.2-ounce) package Boursin® Garlic & Fine Herbs
- 1 tablespoon
capers
Instructions
Core and cut 2 pounds heirloom tomatoes (about 6 medium) into 1/4-inch slices crosswise. Arrange the slices in an overlapping pattern on a platter.
Drizzle the tomatoes with 1 teaspoon sherry vinegar and 1 1/2 teaspoons extra-virgin olive oil. Sprinkle with a generous pinch of flaky sea salt and several grinds black pepper.
Coarsely chop 1/2 cup loosely packed fresh tender herbs, such as parsley, basil, cilantro, dill, tarragon, or a combination and crumble 1 (5.2-ounce) package Boursin® Garlic & Fine Herbs. Scatter herbs, cheese crumbles, and 1 tablespoon capers over the tomatoes and serve.
