Try This One-Ingredient Trick for Super Delicious Chicken

We’re always looking for creative ways to spice up plain chicken breasts (and we know our readers are too), so when we come across a clever way to prepare our go-to weeknight protein, we’re all ears. Here’s one method we hadn’t heard of yet that we thought you might like to know about: Apparently that almost-empty jar of apricot preserves you have just chillin’ in your fridge makes a damn good marinade.
Carrian and Cade, the bloggers behind Oh Sweet Basil, admit that they got the idea for this ingenious recipe from the queen of kitchen hacks and shortcuts herself: Rachael Ray. We’re not surprised in the slightest!
Here’s the ingredient list. Are you ready? Chicken breasts, apricot preserves, Italian dressing, and garlic powder. That’s it. If you have those four things, Bottom-of-the-Jar Chicken is in your future.
Take some apricot preserves (or whatever kind of jam you have) and mix it with the Italian dressing. Pour that marinade over the chicken breasts in a baking dish and bake for about 30 minutes, depending on how thick the meat is. When the chicken is fully cooked through, remove it from the oven and serve with veggies, rice, or pasta.
