Turn the Cocktail of the Summer into a Boozy Popsicle

It’s Fourth of July week, which means that pretty much everyone you know is in vacation mode. Even if you’re not setting your “out of office” just yet, make these boozy Popsicles to get in the spirit and start your week off right. The best part about these Popsicles is that they taste just as good as an actual spritz — and even better if you serve the pop in the spritz. Ingenious!
We’re calling it now: Out with frosé, in with the Aperol Spritz! The drink of the summer is fruity, fresh, and fizzy, and we can’t get enough — especially when the forecast is sizzling hot.
To make your own rendition of everyone’s favorite aperitivo, make sure you have the following ingredients: Aperol, Prosecco, club soda, orange juice, orange zest, orange slices, and, most importantly, a Popsicle mold! This recipe makes 10, but these are so good you might want to make a double batch.
The first step is to juice the oranges. (The fresh stuff really makes a difference — and also ensures that the Popsicles will solidify when you put them in the freezer.) Combine that freshly squeezed goodness in a bowl with the rest of the ingredients and let it sit so the bubbles fizz out a bit.
This Popsicle’s version of a garnish is the gorgeous orange slice poking through the frozen juice. But if you want, treat the entire popsicle as a garnish, by popping it inside your cocktail glass filled with (what else?) an Aperol Spritz.
