Blueberry Cream Cheese Pancake Bites Are the Make-Ahead Breakfast You Need Right Now

There’s nothing like a make-ahead breakfast — especially when you have a packed schedule and are always on the go. I recently came across a recipe for blueberry cream cheese pancakes bites from @mogrubs on Instagram, and my mouth watered at the sight of them. Over the years I’ve found that breakfast doesn’t happen for me on busy days unless it’s a relatively quick meal or if it’s made ahead of time. Luckily these bites check both of the boxes, and they happen to be rather delightful. The recipe takes under 10 minutes to prep from start to finish, and only requires a handful of ingredients. Grab your pancake batter, blueberries, and cream cheese, and let’s make breakfast (or, hey, maybe even dessert!).

How to Make Blueberry Cream Cheese Pancakes Bites

You start things off by grabbing your favorite pancake mix (I grew up using only Krusteaz Buttermilk Mix) and mixing it with water or milk. I added vanilla extract and maple syrup to my batter to add some extra flavor. Now, it’s time to give your blueberries some love. 

Place your blueberries in a microwave-safe container and microwave them for one minute. Then put them in a medium mixing bowl and toss them with a bit of sugar, lemon zest and juice, and cinnamon. There’s just something really satisfying about the combination of lemon and blueberries together when baking. Finally, grab a small bowl and mix both cream cheese and plain Greek yogurt.

Once all three components of these delicious bites are ready to go, grab a muffin pan and grease it with nonstick cooking spray. Add the pancake batter, cream cheese-yogurt mixture, and blueberries, in that order. I found that this recipe makes six muffins, so if this recipe is a hit, feel free to double it next time to make a dozen. 

Now it’s time to place your loaded muffin tin in the oven! Once the pancake bites are finished baking, you can enjoy them warm out of the oven or allow them to cool off completely before storing them in an airtight container. If you’re like me, the entire batch will be gone by the end of the night.

My Honest Review

My excitement for this recipe remained consistent from the start to the very last bite. (Although I may be biased because I am obsessed with anything and everything that has cream cheese — especially when there are berries involved.)

The original recipe is great for a base, but adding ingredients like lemon and cinnamon to the blueberries and maple syrup and vanilla to the pancake batter is a simple way to make this recipe even more delicious. I will most certainly be keeping this recipe in my back pocket for the days when I want something quick for breakfast or even a late-night dessert.

My #1 Tip for Blueberry Cream Cheese Pancakes Bites

I suggest playing around with this recipe and adding in ingredients that you find delicious. This recipe is great because it’s an excellent starting point for you to add different mix-ins like chocolate chips, jam, flavored cream cheese, blackberries, strawberries, or even pumpkin purée. You could also swap in a flavored yogurt or cream cheese.
