Bring This BLT-Inspired Pasta Salad to Your Next Cookout

The combination of bacon, lettuce, tomato, and mayonnaise is one of the greatest out there, and it’s made even better with a few good avocado slices. The combination is so good, in fact, that it’s a crime to confine it to sandwiches only. Other foods deserve bacon, lettuce, and tomato as well. This pasta salad, for example, is so full of BLT goodness that it’s practically a sandwich in a bowl. 

For the perfect potluck side dish, combine cooked, chilled pasta with crumbled bacon. Stir in halved cherry tomatoes, several cups of fresh arugula leaves, chopped red onion, and sliced avocado. Stir it gently to combine all the ingredients, but try not to mash up the avocado too much. 

A BLT salad clearly needs to have a mayonnaise-inspired dressing to keep the comparison going. Make this one by mixing Greek yogurt with mayonnaise, vinegar, chives, garlic powder, and salt and pepper. It’s a bit of a creamy, ranch-style dressing with just a hint of the mayonnaise flavor you’d get from a BLT sandwich. The dressing should be creamy and thin enough to drizzle. If the dressing is too thick, the author says you can thin it out with a bit of milk, water, or buttermilk. 

You can prepare the whole thing in advance, but the bacon will lose its crispness the longer it sits in the dressing. If you want to make the salad ahead of time, you could keep the bacon on the side until it’s time to serve it. Then mix the crispy bacon in right before eating to make sure it stays crunchy.
