This Incredibly Simple Baking Hack Will Make Your Muffin Tops Bigger and Better
Blueberry muffins are one of my absolute favorite desserts. The sweet and tart blueberries combined with the tangy batter (from yogurt or sour cream) and crunchy sugary tops never fail to bring me joy for an early morning breakfast or late night treat. And with baking, I love understanding the basics of essential recipes like muffins. Any tips to up my baking game, I’m here for it!
Sarah Crawford, the blogger behind Broma Bakery posted a Reel showing how to make her “Best Blueberry Muffins EVER.” While that recipe alone is worth talking about, it’s the single tip she gave her followers that really impressed me. And to be honest, it might impress you, too. In the video, she shows us a brilliant hack that I’m sure will take my blueberry muffins up to the next level (or any muffin recipe for that matter!): How to easily get larger muffin tops!
According to Crawford it’s much simpler than you think because it’s all in the way arrange them in your tin. “Only line half of your muffin tins. This will make it so more heat can get in and then your muffins rise more.” Basically, you’ll only fill half of the muffin cups with cupcake papers and batter, leaving the rest empty. Then as they bake, the muffins will rise even more and create those big, domed muffin tops.
Another tip that she shares in the recipe post for these muffins on her website is to fill the muffin tins 3/4 of the way up with batter. Filling them up enough also helps to ensure that you get “big beautiful muffin tops.” She says she usually makes her muffins in a standard 12-cup muffin tin (and only fills up six of them with batter), but this tip works for any size muffin tin you’re using (jumbo, mini or standard). So easy!
