Last night my family gathered up dinner and all of its accoutrements to eat on our backyard patio for the first time of the season. While sometimes I can find a lot of little things to complain about re: the act of eating outside (i.e., bugs, and wind, and cold food), I hate to admit that it was really, really nice. It probably has something to do with the fact that we’ve been stuck inside for the better part of 2020, no?

In an effort to appreciate the little things more, I’m giving eating outside a chance again — and you should too. That’s why we asked the Kitchn Collective for their favorite recipes to enjoy in the open air. Here’s what they had to say.

1. Spaghetti Squash Sun-Dried Tomato Crab Boats

“This is a deliciously fresh and summery meal. Not to mention, the boats kind of serve as bowls so if you play your cards right, you don’t even have to dirty plates.” — Lindsay Grimes Freedman of The Toasted Pine Nut

2. BLT Pasta Salad

“Our entire family loves this BLT pasta salad. We eat it as a side dish or even a main course. It’s just light enough to be enjoyed outside, but also has a comfort-food feeling.” — Becky Hardin of The Cookie Rookie

3. No-Bake Strawberry Cheesecake

“The best part of this cheesecake is that literally tastes like fresh strawberry ice cream. The filling is made in a blender, and the whole thing is no-bake! It is the perfect treat for a day outside with your family when the weather warms up.” — Jocelyn Delk Adams of Grandbaby Cakes

4. Summer Cheese Board

“In the summer, we spend most of our time outside and we find ourselves grilling a few times a week. My favorite thing to do is to put together a cheese and charcuterie board with homemade pesto and grilled bread, vegetables and fruit, along with the cheese and charcuterie. My family loves the variety and there’s something there for everyone.” — Alice Choi of Hip Foodie Mom
