Yes, it’s already April! We can’t believe it either. After all the Easter celebrations and St. Patrick’s Day festivities in March (and a delicious Pi Day!), we’re officially in spring mode. This means celebrating the season’s bounty of sweet spring asparagus with cheesy baked asparagus, lemony ricotta pasta with roasted asparagus and burst tomatoes, and our absolute favorite asparagus salad.
