1. Three Mountains Yellow Original Sriracha Chili Sauce

A small chili farm in Sriracha, Thailand, Three Mountains produces three Sriracha varieties using chilis grown on the farm: yellow, red, and green. The red and green were difficult to find in stock or at all, so stock up on the yellow sauce while you can. Made with yellow Thai burapa chilies, the distinctively yellow sauce bottled with the yellow cap is a bit sweeter, milder, and more subtle than its red- and green-capped counterparts.

2. Bushwick Kitchen Weak Knees Gochujang Sriracha

This bottle is filled with the sweet heat we’ve come to expect from Brooklyn-based Bushwick Kitchen. It’s everything you love about classic Sriracha with an extra dimension of flavor courtesy of the rich, fermented gochujang (Korean red pepper paste). As the name suggests, it’ll give you “weak knees” when added to, well, everything.

5. Empress Irwin Mango Hot Sauce

Empress’s very first sauce brings heat that is balanced by the sweetness of mangoes. Made with locally grown, hand-selected Taiwan Chilis and Irwin Mangoes, the company also adds goji berries and ginger, among other ingredients, to further fine-tune the flavor. The naturally fermented hot sauce is also made and bottled in small batches in Taiwan.

6. Nyonya Garlic Chili Sauce

Like many great recipes, the one for this garlic-vinegar-chili sauce comes from a great-grandmother. Produced by Ewe and Yishan, a husband-and-wife team based in Central Taiwan, the sauce is made with a specific kind of hard-neck garlic called He Mei 和美蒜 that has smaller, spicier cloves than other varieties, according to the Yun Hai website. It’s available in two spice levels — spicy and mild — and in two sizes.
