Ceviche is the ultimate no-cook dish. You marinate bite-sized pieces of raw shrimp in lime juice, and through a process called denaturation — where the citric acid from the lime juice changes the proteins in the shrimp — they become opaque and firm. This ceviche has fresh lime and orange juice, but the cool, creamy avocado helps temper all the acidity.
