Meatloaf Is Never Boring When You Stuff It with This Much Cheese

Usually it’s what’s on top of a meatloaf that makes it special. My mother covers hers with a sugary glaze that always makes me think of it fondly, even though the rest of it is just, well, a loaf of meat. This bonkers barbecue turkey meatloaf, however, is stuffed with so much cheese that it reminds me of a ravioli made of meat. Even the meat part is full of shredded sweet potato, so the whole loaf is full of interesting flavors, and there’s not a single bite that’s boring or predictable at all. 

To make, shred a small sweet potato. Cook that in a bit of olive oil in a skillet for about five minutes to soften it and bring out the sweetness. Let it cool for a few minutes while you prepare the rest of the loaf. 

In a large bowl, combine ground turkey, onion, garlic, cumin, cayenne pepper, salt, pepper, and barbecue sauce. With all those spices, you know this meatloaf will never be bland. Add breadcrumbs, egg, and the sweet potato. Mix it all together gently with your hands. (You can use a large spoon if you really want to, but it’s a lot easier to use your hands.)

Arrange half the meat on a parchment-lined baking sheet in the shape of a log. Top that with sliced or shredded cheddar cheese. Keep the cheese to the center of the meat log, and leave about half an inch of room on all sides. Top it all with the rest of the meat, patting it into a log shape and making sure the edges are sealed so the cheese doesn’t run out. 

Brush the loaf with barbecue sauce and bake it for about an hour. A meat thermometer should read 160 degrees F when it’s done. Cover it with a bit more barbecue sauce and let it cool for a few minutes before slicing into it. Make sure to let it rest for a few minutes so the cheese will be melty and delicious — not spilling out all over.
