Barbecue Pork Mac ‘n’ Cheese Bake

This recipe is part of a two-day meal plan and starts with making a batch of shredded pork to be used in this dish and in a chili verde. The meat is tossed with barbecue sauce, then piled high on a fabulous mac ‘n’ cheese.

Both recipes are part of a weekly menu of easy dinners from Cassy Joy Garcia, the author of Cook Once Dinner Fix.

Barbecue Pork Mac 'n' Cheese Bake

Serves 4

Ingredients

  • 4 cups

    milk or water

  • 3 tablespoons

    salted butter

  • 1/2 teaspoon

    fine sea salt

  • 12 ounces

    dried elbow pasta

  • 2 cups

    shredded cheddar cheese

  • 4 1/2 cups

    shredded cooked pork

  • 1 1/2 cups

    barbecue sauce

  • 3 tablespoons

    finely chopped fresh chives, for garnish

  1. Preheat the oven to 400°F.

  2. In a 3-quart Dutch oven or oven-safe saucepan, combine the milk, butter, and salt. Bring to a boil over medium-high heat, then add the pasta and cook according to the package instructions; do not drain. Add the cheese to the pasta and stir to combine.

  3. In a large bowl, stir together the shredded pork and the barbecue sauce. Spread the seasoned pork over the pasta. Bake for 15 minutes, or until the top of the pork has darkened in color. Let cool for about 5 minutes.

  4. Serve the mac ’n’ cheese garnished with the chives.
