very ripe medium banana
- 1
large egg
- 1 tablespoon
plus 1 teaspoon packed light brown sugar, divided
- 1/2 teaspoon
ground cinnamon, divided
- 1/4 teaspoon
kosher salt
- 5 tablespoons
all-purpose flour
- 1/2 teaspoon
baking powder
Instructions
Coarsely chop 1 tablespoon walnuts, if using.
Place 1 banana, 1 large egg, 1 tablespoon of the packed light brown sugar, 1/4 teaspoon of the ground cinnamon, and 1/4 teaspoon kosher salt in a standard size microwave-safe mug (at least 8 ounces). Mash with a fork until combined and only a few small lumps remain. Add 5 tablespoons all-purpose flour and 1/2 teaspoon baking powder, and stir to combine. Stir in the walnuts, if using.
Combine the remaining 1 teaspoon packed light brown sugar and remaining 1/4 teaspoon cinnamon in a small bowl, then sprinkle over the top of the batter.
Microwave on HIGH until a toothpick inserted in the center comes out clean, 2 minutes to 2 minutes 15 seconds total. Cool for 1 minute before serving.
