This Garlicky Chicken with Mozzarella Is a Dinner Dream

Shorts weather is upon us, which means there’s asparagus and radishes and a whole bunch of spring produce that I should want to eat right now. We wait all winter for something that feels a little more fresh, right?

As food writers and editors we tend to write about food seasonally, but when I saw this recipe for a garlic butter tomato baked chicken from Little Spice Jar, I threw all of that aside because it looks like a dream dinner. Seriously, I can’t stop looking at the photos that accompany this recipe and planning my attack.

Chicken covered in cheese? Oh hell yes. Out-of-season tomatoes that are roasted in a bunch of balsamic vinegar and olive oil? Gimme!

This recipe is also a one-pan wonder. To start, you marinate the chicken with some Italian seasoning, red pepper flakes, garlic, and olive oil. Then you simply place the cherry tomatoes, balsamic vinegar, honey, garlic, butter, and basil into a baking dish. You put the marinated chicken on top and bake for about 20 minutes. Then you add the cheese and broil until it’s a little melty.

The tomato-balsamic situation turns into a kind of “gravy,” according to Little Spice Jar, which means the dish is perfect to serve over quinoa or with lots of crusty bread for dipping.
