This vegan balsamic mushroom pasta from Lazy Cat Kitchen is a masterpiece in layering flavor. The recipe gets its depth from three umami-packed ingredients: mushrooms, balsamic vinegar, and soy sauce. Together, they create a dish so savory and delicious, you almost don’t believe it’s vegan.

The author uses chestnut mushrooms for this recipe, which I had never heard of before — but they’re similar to white button mushrooms, which you can use instead. Lazy Cat Kitchen said the first time she made this dish, she cooked the mushrooms in a skillet. This method is fast, easy, and leaves you with only one pan to clean. BUT she said cooking the mushrooms in the oven is also a nice idea because it’s more hands-off and gives you time to do other things. So: the choice is yours.

Once the mushrooms are partially cooked, you add the balsamic mixture to the mushrooms so that they bathe in this salty, flavorful sauce and continue to cook down.
