These Easy, Cheesy Chicken Roll-Ups Are Calling Your Name

Chances are you’ve probably got plenty of frozen chicken on hand for those weeknights when you need to throw dinner together quickly. But it’s no secret that the same lemon chicken night after night can get a little boring. Luckily, there are plenty of ways to make chicken exciting again. Case in point: This fun recipe for baked mozzarella chicken roll-ups.
This Italian-inspired dish combines a few simple elements — spinach, marinara sauce, and mozzarella cheese — to create a rich and flavorful dish that doesn’t take much effort to prepare. For a dish that looks as good as it tastes, you’ll be pleasantly surprised at how simple it is to put together. And while you might not be able to truly call this recipe healthy it does have far fewer calories than, say, classic chicken Parmesan, with which it bears some similarities.
First you’ll make the filling: Quickly sauté your spinach with garlic, then combine in a bowl with ricotta and Parmesan. Spoon the filling onto each piece of chicken, then roll it up. Dip each roll into the egg whites, and then into the bread crumbs, which will impart the chicken with a slightly crunchy outer crust. Once you’ve placed each roll into the baking dish, pour half your marinara sauce on top (store-bought is fine, but you can make your own, too) and cook for 25 minutes. Once the time is up, pour on the rest of the marinara sauce, top each roll with a slice of mozzarella, and bake for another 3 to 5 minutes, or until the cheese is melted. And voilà! You’re ready to serve.
These chicken roll-ups pair perfectly with a side of pasta or rice, or a loaf of homemade garlic bread. Whoever said easy weeknight dinners need to be boring clearly didn’t understand the power of some melted, gooey cheese to make any dish delicious.
