Pork chops and applesauce were a weeknight staple in my home. We’d never be served one without the other because the applesauce added moisture and flavor to an otherwise dry dinner. It wasn’t my parents’ fault — everyone in the late ’80s and early ’90s ate overcooked pork, because that’s what the USDA told them to do.

Luckily, dry pork chops are a thing of the past, as long as you season them well and cook them to the correct temperature (145°F!). Here’s how to make easy weeknight baked boneless pork chops.

Are Boneless Pork Chops Better in the Oven or on the Stove?

Pan-seared pork chops are undoubtedly delicious, but these baked pork chops are a worthy rival (and for those of you true carnivores, we also have an oven bone-in pork chop recipe). Choosing a cooking method isn’t just about flavor (although that’s important!). It is also about what else I am cooking and how much attention I can give each part of the meal. Baked boneless pork chops are flavorful and juicy, yet they do not require my full attention once the oven door shuts, which leaves me free to tend to side dishes or help with homework.

What Temperature Should Boneless Pork Chops Be Baked To?

Pork chops should be cooked to an internal temperature of 145°F. The best way to verify doneness is to insert an instant-read thermometer into the center of the pork chop.

If You’re Going to Make Baked Boneless Pork Chops, a Few Tips

  • Spice mixture: Fresh spices will infuse the chops with full-bodied flavor. You can rub the chops up to a day in advance to infuse every bite.
  • Baking time: 1-inch-thick pork chops will be done in 20 to 23 minutes in a 400°F oven. Thicker chops may take slightly longer, while thinner chops should be checked a few minutes early.
  • Let it rest: Once the chops are out of the oven, let them rest for five minutes before serving to give the juices time to redistribute throughout the meat.

Ingredients

  • 3 tablespoons

    olive oil, divided

  • 1 teaspoon

    kosher salt

  • 1 teaspoon

    onion powder

  • 1 teaspoon

    garlic powder

  • 3/4 teaspoon

    paprika

  • 1/4 teaspoon

    freshly ground black pepper

  • 4

    (1-inch-thick) boneless pork loin chops (about 1 3/4 pounds total)

  1. Arrange a rack in the middle of the oven and heat the oven to 400°F. Coat the bottom of a 9x 13-inch baking dish with 1 tablespoon of the olive oil.

  2. Place 1 teaspoon kosher salt, 1 teaspoon onion powder, 1 teaspoon garlic powder, 3/4 teaspoon paprika, and 1/4 teaspoon black pepper in a small bowl and stir to combine.

  3. Coat 4 boneless pork loin chops with1 tablespoon of the olive oil. Sprinkle the spice mixture all over the pork. Place in a single layer in the baking dish. Drizzle the pork chops with the remaining 1 tablespoon olive oil.

  4. Bake until an instant-read thermometer inserted into the center of the pork chops registers at least 145°F, 20 to 23 minutes. Transfer the pork chops to a clean cutting board or plates and let rest for 5 minutes before serving.
