Bacon-Wrapped Chorizo Dogs Are Guaranteed to Be Summer’s Newest Best Friend

As the summer season sets in, I find myself increasingly anxious to be outdoors and enjoying the warmer weather. And with that, of course, naturally follows my appetite. From grilling in the park, to having family meals with friends in a backyard, sizzling summer days are ahead, and I cannot wait to get cooking.

Luckily for me, Derek Wolf of Over the Fire Cooking got inspired by El Mago Cocina, and whipped up some delicious looking Bacon Wrapped Chorizo Dogs that I cannot wait to bust out at the next BBQ.  

The recipe is fairly simple, starting with encasing some cubed cheese inside ground chorizo, then wrapping it in bacon. Place in the fridge for a bit before adding to the grill on high heat. Cook until the bacon is looking nice and crispy, then move the dogs over to the indirect heat side of the grill to finish them off. Next, load your dog into a hot dog bun and top with cilantro-lime cream sauce, chopped cilantro, red onion, and sliced jalapeños on top.
