I Tried the Avocado Hash Brown Recipe That TikTok Loves and I See Why It’s So Popular

With avocado toast in constant rotation in our house, the question is not will we have it — it’s more how will we have it and which topping will join the avocado on the toast today? While I’m always looking for unique flavors (hello, smoked salmon and cherry tomatoes), it always catches my attention when someone questions what to put underneath it. And that’s exactly what @cookingwithLynja did in a recent TikTok.

This “regular mom with killer cooking skills” took a little inspiration from @bria_lemirande by trading in traditional toast for Trader Joe’s hash browns on one of her recent “Bussin or Nah” segments.

Serving up just the right amount of chaos — complete with a lab coat because she takes her cooking very seriously — Lynja tossed a couple of patties in the air fryer until they were crispy. Eggs found their way into her frying pan, then she blended interesting flavors with avocado to spread onto the potato patty in lieu of toast. As I would trade bread in for potatoes any day, this had my name all over it.

How to Make Avocado Hash Browns

The thing about this recipe is that it isn’t even really a recipe. It’s whatever you want, however you want it. I did, however, stick to Lynja’s method.

To get the right crunch, the hash browns should be air-fried. I haven’t jumped on the air fryer bandwagon, though, so I made my Trader Joe’s patties the way I normally do: in the frying pan, flipping until golden-brown.

In a nonstick pan, I cracked two eggs and steamed them under a covered lid with 1/4 cup of water. In the meantime, I mashed up a ripe avocado with a drizzle of hot honey, the juice of half a lemon (around 1 tablespoon), and a pinch of salt. Then it was assembly time. Laying down the hash brown first, I then added smear of avocado, the eggs, and a sprinkle of grated Parmesan before topping with Everything But the Bagel seasoning.

My Honest Review of Avocado Hash Browns

While the comments showed that the OG poster Lynja “killed it!” I was just lukewarm about the outcome. While using a hash brown for any part of a meal already has a check in the win column for me, I wasn’t a huge fan of the avocado mixture that Lynja created. Specifically, it was the hot honey that set the wrong tone for what I expected was a savory snack. I also fought with the Parmesan cheese and the Everything But the Bagel seasoning a bit.

Overall, though, I will most certainly swap out a hash brown patty for toast on most days, and I loved the jammy center that her steaming method of cooking the eggs created. It seems this new way of making a yummy standby snack has made the old method toast

Tips for Making Avocado Hash Browns

  1. Add a little water to your eggs. Putting a little water and covering the pan with the eggs makes them cook gently, resulting in a more tender egg white and jammy yolk.
  2. Mash the avocados. Mashing avocado instead of using slices makes it not only easier to spread, but also distributes the flavors of any add-ins.
  3. Don’t skip the use of an air fryer if you have one. Unless you have an air fryer, the hash browns might not crisp up to be strong enough to be used as toast to hold all those tasty, heavy toppings. 
  4. Go for grated. Use grated Parmesan cheese instead of shredded. Trust me on this one.
