Turkey Burrito Bowls with Cilantro-Lime Rice

Craving Chipotle but don’t feel like waiting in line or paying for delivery? TikTok-famous chef Cedric Thompson has you covered. His easy-to-make at-home Chipotle bowl has all the familiar flavors you love and none of the hassle — plus, you can customize it however you want to match your usual order!

To make a truly authentic Chipotle bowl, you’ll need cilantro-lime rice. You can prepare it ahead to save time when cravings strike, or you can start it before cooking your protein. Either way, you’ll need a cup of basmati rice cooked on the stovetop. Once it’s nearly done, season your chicken thighs in a bowl with olive oil — Thompson recommends adding chipotle chili pepper, salt, sazón, cumin, garlic powder, and pepper. Then, you’ll cook the thighs on a cast iron skillet at medium-high for about five minutes on each side. 

While your chicken thighs cook, it’s time to season your cilantro-lime rice! Thompson adds kosher salt to taste, a quarter cup or so of chopped cilantro, and the juice of half a lime and a lemon. Add your rice to the bottom of the bowl, followed by black or pinto beans and finally, your chicken.  

Thompson added sour cream, Monterey Jack cheese, and spicy pico de gallo to his bowl, but the options are truly limitless. For extra flavor, add corn, onions, peppers, or even guacamole! (We love Rachael Ray’s hack for making delicious guac without a knife.) 

If you don’t eat meat or dairy, you can still enjoy a mouth-watering bowl — leave out the chicken or consider adding sofritas or extra beans. This creamy vegan queso would make an amazing addition, too!
