Are Probiotics the Solution to Greek Yogurt’s Acid Whey?

General Mills recently filed a patent to use the acidic byproduct of Greek yogurt in the production of a new probiotic.

You might remember that concerns about acid whey were raised by Modern Farmer because the whey can be toxic to the natural environment if not disposed of responsibly.

The patent indicates a method of “enzyme production of soluble fiber from yogurt whey.”

If this goes into production, it will be good news for yogurt fans all around.
